Ingrédients

  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken, thyme, bay leaf, salt, and pepper.
  6. Reduce heat and simmer for 20 minutes.
  7. Add egg noodles and cook until tender.
  8. Remove bay leaf and adjust seasoning if needed.
  9. Serve hot, garnished with fresh parsley.
