Ingrédients

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder

- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1/2 cup brewed coffee, cooled
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, baking powder, and salt.
- In another bowl, cream butter and sugar together until fluffy.
- Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture.
- Drop tablespoon-sized balls of dough onto a baking sheet.
- Bake for 10-12 minutes, then let cool.
- In a separate bowl, whisk mascarpone cheese and powdered sugar until smooth.
- Assemble cookies by spreading mascarpone filling between two cookies.
- Dip the edges in cocoa powder before serving.
