Ingrédients

- 12 oz tortellini
- 4 oz pancetta, diced
- 2 large eggs
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook tortellini according to package instructions.
- In a skillet, cook pancetta over medium heat until crispy.
- Add minced garlic and cook for 1 minute.
- In a bowl, whisk eggs and mix in Parmesan cheese.
- Drain tortellini and add to the skillet with pancetta and garlic.
- Remove from heat and quickly stir in the egg and cheese mixture.
- Season with salt and pepper.
- Garnish with parsley before serving.
