- 2 medium sweet potatoes
- 1 pound ground turkey
- 1 tablespoon taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1/2 cup shredded cheese
- Salt to taste
- Optional toppings: avocado, cilantro, sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork.
- Bake the sweet potatoes for 45-60 minutes until tender.
- While the potatoes are baking, cook the ground turkey in a skillet over medium heat.
- Add taco seasoning and mix well.
- Stir in black beans, corn, and diced tomatoes. Cook until heated through.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Stuff the sweet potatoes with the turkey mixture.
- Top with shredded cheese and any optional toppings.
Notes
- You can use ground beef or chicken instead of turkey.
- Adjust the spice level by using mild or spicy taco seasoning.
