Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion, garlic, carrot, and celery. Sauté until soft.
- Stir in turmeric and cook for another minute.
- Add chicken broth and bring to a boil.
- Reduce heat and add shredded chicken.
- Season with salt and pepper.
- Simmer for 10 minutes.
- Garnish with fresh parsley before serving.
