Description
A creamy and savory Tuscan chicken pasta dish made with cottage cheese.
Ingrédients

- 8 oz penne pasta
- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add shredded chicken, cherry tomatoes, and spinach to the skillet.
- Stir in cottage cheese and Italian seasoning. Cook until heated through.
- Add the cooked pasta to the skillet and toss to combine.
- Season with salt and pepper to taste.
- Sprinkle parmesan cheese on top before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Feel free to add other vegetables like bell peppers or zucchini.
