Description
Twice baked potatoes are a delicious and hearty side dish that combines the creamy texture of mashed potatoes with the crispy skin of baked potatoes.

- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup green onions, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and prick the potatoes with a fork.
- Bake the potatoes for about 45-60 minutes until tender.
- Remove the potatoes and let them cool slightly.
- Cut the potatoes in half lengthwise and scoop out the insides into a bowl.
- Add sour cream, cheese, milk, butter, green onions, salt, and pepper to the potato insides and mix well.
- Fill the potato skins with the mixture.
- Top with additional cheese if desired.
- Bake again for 15-20 minutes until heated through and cheese is melted.

- Choose potatoes that are uniform in size for even baking.
