Description

Ingrédients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cranberries, dried
- 1/2 cup of pecans, chopped
- 1/2 cup of green onions, sliced
- 1/4 cup of parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring the vegetable broth to a boil.
- Add the quinoa to the broth, reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it stand for 5 minutes, then fluff with a fork.
- In a bowl, combine the cooked quinoa, cranberries, pecans, green onions, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve warm or at room temperature.
Notes
- This dish can be made ahead of time.
- Great for vegetarian guests.
- You can substitute walnuts for pecans if desired.
