  • 1 cup of cranberries, dried
  • 1/2 cup of pecans, chopped
  • 1/2 cup of green onions, sliced
  • 1/4 cup of parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the vegetable broth to a boil.
  3. Add the quinoa to the broth, reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it stand for 5 minutes, then fluff with a fork.
  5. In a bowl, combine the cooked quinoa, cranberries, pecans, green onions, and parsley.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  7. Pour the dressing over the quinoa mixture and toss to combine.
  8. Serve warm or at room temperature.
