A healthy twist on traditional stuffed peppers without the hassle of stuffing.

- 4 bell peppers, halved
- 1 pound ground turkey
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Sauté onion and garlic until soft.
- Add ground turkey, cook until browned.
- Stir in cooked rice, diced tomatoes, and seasoning.
- Fill bell pepper halves with the mixture.
- Place peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for an additional 10 minutes.
Notes
- You can substitute ground turkey with ground beef or chicken.
- Add cheese on top for extra flavor.
