Instructions

  1. Rinse quinoa under cold water.

  3. Add quinoa and reduce heat to a simmer.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. In a skillet, sauté onions and sweet potatoes until tender.
  6. Add kale and cook until wilted.
  7. Combine quinoa with the vegetable mixture.
  8. Season with garlic powder, cumin, salt, and pepper.
  9. Serve warm.
