- 1 1/2 cups almond flour
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut sugar, baking soda, cinnamon, nutmeg, and salt.
- Add maple syrup, melted coconut oil, vanilla extract, and pumpkin puree. Mix until smooth.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Store leftovers in an airtight container.
