Description
A delicious vegan Thanksgiving dinner that everyone will enjoy.
Ingrédients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 cup diced sweet potatoes
- 1 cup green beans, trimmed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup cranberry sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- On a baking sheet, toss sweet potatoes and green beans with olive oil, garlic powder, thyme, salt, and pepper.
- Roast vegetables in the oven for 25 minutes, stirring halfway through.
- Once quinoa is done, fluff it with a fork and stir in chickpeas.
- Serve quinoa topped with roasted vegetables and cranberry sauce.
Notes
- This dish can be prepared ahead of time and reheated.
- Feel free to add other vegetables of your choice.
- Adjust seasoning according to your taste.
