A collection of vegan recipes for a Thanksgiving feast.

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced sweet potatoes
- 1 cup green beans
- 1 cup cranberries
- 1/2 cup walnuts
- 2 tbsp olive oil
- 1 tsp cinnamon
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While quinoa cooks, toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
- Add green beans to the baking sheet and roast for an additional 10 minutes.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, green beans, cranberries, and walnuts.
- Sprinkle cinnamon over the mixture and toss to combine.
- Serve warm.
Notes
- You can substitute quinoa with rice if preferred.
- Add other seasonal vegetables as desired.
- This dish can be made ahead of time and reheated.
