Ingrédients

  • 4 cups of vegetable broth
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add red bell pepper, cook for 5 minutes.
  4. Stir in quinoa, vegetable broth, black beans, corn, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for 20 minutes or until quinoa is cooked.
  7. Fluff with a fork and serve warm.
