Ingrédients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 can of black beans, drained and rinsed
- 1 cup of corn
- 1 red bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add red bell pepper, cook for 5 minutes.
- Stir in quinoa, vegetable broth, black beans, corn, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until quinoa is cooked.
- Fluff with a fork and serve warm.
Notes
- This dish can be made ahead of time.
- Store leftovers in an airtight container.
- Garnish with fresh cilantro before serving.
