Ingrédients

  • 1 cup of quinoa
  • 1 cup of vegetable broth
  • 1 cup of mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans.
  3. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  5. Add mushrooms and thyme. Cook until mushrooms are tender.
  6. Toss in green beans and cook for another 5 minutes.
  7. Combine the vegetable mixture with quinoa. Season with salt and pepper.
  8. Transfer to a baking dish and bake for 20 minutes.

Notes

  • You can substitute brown rice for quinoa.
  • Feel free to add other vegetables like bell peppers or carrots.
