Description
A selection of vegetable dishes perfect for Thanksgiving.
Ingrédients

- 2 cups Brussels sprouts
- 3 cups green beans
- 4 cups carrots, sliced
- 1 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and trim the Brussels sprouts and green beans.
- Peel and slice the carrots.
- In a large bowl, combine all vegetables.
- Add olive oil, salt, pepper, garlic, and thyme. Toss to coat.
- Spread the vegetables on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove from the oven and serve hot.
Notes
- Feel free to add other seasonal vegetables.
- Adjust seasoning to your taste.
- Can be made ahead of time and reheated.
