  • 1 cup coconut milk
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and bell pepper. Sauté until softened.
  3. Add potatoes, corn, and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes until potatoes are tender.
  5. Stir in coconut milk, salt, pepper, smoked paprika, and thyme.
  6. Cook for another 5 minutes.
  7. Blend half of the chowder for a creamy texture. Return to pot and mix well.
  8. Serve hot.
