- 4 cups fresh corn kernels
- 1 medium onion, diced
- 2 medium potatoes, diced
- 1 red bell pepper, diced
- 3 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 tablespoon fresh thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and bell pepper. Sauté until softened.
- Add potatoes, corn, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until potatoes are tender.
- Stir in coconut milk, salt, pepper, smoked paprika, and thyme.
- Cook for another 5 minutes.
- Blend half of the chowder for a creamy texture. Return to pot and mix well.
- Serve hot.

- Use fresh corn for the best flavor.
- Adjust seasoning to taste.
- Add more vegetables if desired.
