A delicious vegetarian gravy perfect for Thanksgiving.
Ingrédients

- 1 cup chopped onions
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 4 cups vegetable broth
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add onions, carrots, and celery. Sauté until soft.
- Pour in vegetable broth and soy sauce. Bring to a simmer.
- Add thyme and rosemary. Cook for 10 minutes.
- Mix cornstarch with a bit of water. Stir into the gravy to thicken.
- Season with salt and pepper.
- Serve warm over your favorite dishes.
