  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a large pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. In a separate pan, sauté onions, carrots, celery, and mushrooms until tender.
  6. Add thyme, rosemary, salt, and pepper to the vegetables.
  7. Combine the sautéed vegetables with cooked quinoa.
  8. Mix well and serve warm.
