  • 1/4 cup of olive oil
  • 1 tablespoon of balsamic vinegar

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a pan, sauté carrots, green beans, and bell peppers in olive oil.
  5. Add garlic powder, onion powder, salt, and pepper to the veggies.
  6. Combine cooked quinoa with sautéed vegetables.
  7. Drizzle with balsamic vinegar and mix well.
  8. Serve warm.
