- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of green beans
- 1 cup of chopped bell peppers
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 1/4 cup of olive oil
- 1 tablespoon of balsamic vinegar
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a pan, sauté carrots, green beans, and bell peppers in olive oil.
- Add garlic powder, onion powder, salt, and pepper to the veggies.
- Combine cooked quinoa with sautéed vegetables.
- Drizzle with balsamic vinegar and mix well.
- Serve warm.
Notes
- Feel free to add other vegetables of your choice.
- This dish can be made ahead of time and reheated.
- Pair with a salad for a complete meal.
