Instructions
- Preheat the oven to 375°F (190°C).
- Rinse and prepare the quinoa according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Add green beans and cook for 5 minutes.
- Add cherry tomatoes and corn; cook for an additional 3 minutes.
- Mix in the cooked quinoa, salt, pepper, and lemon juice.
- Transfer the mixture to a baking dish.
- Bake for 15-20 minutes until heated through.
- Garnish with fresh parsley before serving.
