  • 1 cup of chopped pecans
  • 1 cup of diced sweet potatoes
  • 1 cup of green beans
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth. Bring to a boil, then simmer for 15 minutes.
  4. On a baking sheet, toss sweet potatoes with olive oil, salt, and pepper. Roast for 25 minutes.
  5. In a skillet, sauté onions and garlic until translucent.
  6. Add green beans and cook for an additional 5 minutes.
  7. In a large bowl, combine cooked quinoa, roasted sweet potatoes, sautéed onions, green beans, cranberries, and pecans.
  8. Toss gently and serve warm.
