Ingrédients

- 2 cups of butternut squash, cubed
- 1 cup of Brussels sprouts, halved
- 1 cup of green beans, trimmed
- 1 cup of quinoa
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of dried thyme
- 1/4 cup of chopped walnuts
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the butternut squash, Brussels sprouts, and green beans with olive oil, salt, pepper, garlic powder, and thyme.
- Spread the vegetables on a baking sheet.
- Roast for 25-30 minutes until tender.
- While the vegetables are roasting, cook quinoa according to package instructions.
- Once cooked, fluff the quinoa with a fork.
- Mix the roasted vegetables with quinoa in a large bowl.
- Top with chopped walnuts before serving.
Notes
- Adjust seasoning to taste.
- Feel free to add other seasonal vegetables.
- This dish can be served warm or at room temperature.
