A delicious walking taco casserole that combines all the flavors of a walking taco in a hearty dish.

  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese
  • 1 cup sour cream
  • 1 jalapeño, sliced
  • 1 cup diced tomatoes

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, cook the ground beef until browned.
  3. Add taco seasoning, black beans, corn, and salsa. Stir well.
  4. In a baking dish, layer half of the crushed tortilla chips.
  5. Spread the beef mixture over the chips.
  6. Add half of the cheese on top.
  7. Layer the remaining chips, then the rest of the beef mixture, and top with the remaining cheese.
  8. Bake for 20-25 minutes until cheese is melted.
  9. Remove from oven and top with sour cream, jalapeños, and diced tomatoes.
