Description
A hearty white chicken chili packed with flavor.
Ingrédients

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 3 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 can green chilies
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup corn
- 1/2 cup heavy cream
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in the beans, chicken broth, shredded chicken, and green chilies.
- Add cumin, oregano, salt, and pepper.
- Bring to a simmer and cook for 20 minutes.
- Add corn and heavy cream, stir well.
- Simmer for another 5 minutes before serving.
Notes
- Adjust spice level by adding jalapeños.
- Top with cheese and cilantro if desired.
- Can be made in a slow cooker.
