Ingrédients

  • 2 cans white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 can green chilies

  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup corn
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in the beans, chicken broth, shredded chicken, and green chilies.
  4. Add cumin, oregano, salt, and pepper.
  5. Bring to a simmer and cook for 20 minutes.
  6. Add corn and heavy cream, stir well.
  7. Simmer for another 5 minutes before serving.

Notes

  • Adjust spice level by adding jalapeños.
  • Top with cheese and cilantro if desired.
