Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, and pepper.
  3. Spread squash on a baking sheet and roast for 25-30 minutes.
  4. In a large bowl, combine mixed greens, roasted squash, pomegranate seeds, walnuts, and feta cheese.
  5. In a small bowl, whisk together olive oil and balsamic vinegar.
  6. Drizzle the dressing over the salad and toss to combine.
