Ingrédients

- 2 cups mixed greens
- 1 cup roasted butternut squash, cubed
- 1/2 cup pomegranate seeds
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss cubed butternut squash with olive oil, salt, and pepper.
- Spread squash on a baking sheet and roast for 25-30 minutes.
- In a large bowl, combine mixed greens, roasted squash, pomegranate seeds, walnuts, and feta cheese.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Drizzle the dressing over the salad and toss to combine.
- Serve immediately.
Notes
- You can add grilled chicken for extra protein.
- Substitute feta with goat cheese if desired.
- This salad can be made ahead of time; just keep the dressing separate until serving.
