A simple and delicious zucchini fritters recipe that makes a great snack or side dish.
Ingrédients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Oil for frying
Instructions
- Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes.
- Drain excess moisture from the zucchinis.
- In a bowl, combine zucchini, flour, Parmesan, eggs, parsley, pepper, and garlic powder.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten slightly.
- Cook for 3-4 minutes on each side until golden brown.
- Remove and drain on paper towels.
Notes
- Serve with sour cream or yogurt.
- Can be baked instead of fried for a healthier option.
