Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes.
  2. Drain excess moisture from the zucchinis.
  3. In a bowl, combine zucchini, flour, Parmesan, eggs, parsley, pepper, and garlic powder.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the pan and flatten slightly.
  6. Cook for 3-4 minutes on each side until golden brown.
  7. Remove and drain on paper towels.
