Description
Zucchini lasagna roll ups are a healthy twist on traditional lasagna. They are filled with cheese and sauce, rolled up, and baked to perfection.

- 3 large zucchinis
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, add a spoonful of the cheese mixture, and roll it up.
- Place the roll in the baking dish and repeat with remaining strips.
- Cover the roll ups with remaining marinara sauce and sprinkle with mozzarella cheese.
- Bake for 25-30 minutes until cheese is bubbly.
Notes
- Use a mandoline for even slices.
- For extra flavor, add chopped spinach to the cheese mixture.
- Let the roll ups cool for a few minutes before serving.
