Description

Zucchini lasagna roll ups are a healthy twist on traditional lasagna. They are filled with cheese and sauce, rolled up, and baked to perfection.


Ingrédients

  • 3 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Take a zucchini strip, add a spoonful of the cheese mixture, and roll it up.
  6. Place the roll in the baking dish and repeat with remaining strips.
  7. Cover the roll ups with remaining marinara sauce and sprinkle with mozzarella cheese.
  8. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • Use a mandoline for even slices.
  • For extra flavor, add chopped spinach to the cheese mixture.
