Description
A rich and creamy lobster bisque that captures the essence of the sea.
Ingrédients

- 2 lobsters (about 1.5 lbs each)
- 4 cups fish stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/4 cup brandy
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Cook the lobsters in boiling water for 8-10 minutes, then remove and let cool.
- Once cool, remove the meat and chop it into small pieces.
- In a pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
- Stir in the tomato paste and brandy, cooking for 2 minutes.
- Add the fish stock and simmer for 20 minutes.
- Blend the mixture until smooth, then return to the pot.
- Stir in the heavy cream and lobster meat, heating gently.
- Season with salt and pepper.
- Serve hot, garnished with chives.
Notes
- Use fresh lobster for best flavor.
- Fish stock can be homemade or store-bought.
- Adjust cream quantity for desired richness.
