Ingrédients

  • 2 lobsters (about 1.5 lbs each)
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 cup brandy
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Cook the lobsters in boiling water for 8-10 minutes, then remove and let cool.
  2. Once cool, remove the meat and chop it into small pieces.
  3. In a pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  4. Stir in the tomato paste and brandy, cooking for 2 minutes.
  5. Add the fish stock and simmer for 20 minutes.
  6. Blend the mixture until smooth, then return to the pot.
  7. Stir in the heavy cream and lobster meat, heating gently.
  8. Season with salt and pepper.
  9. Serve hot, garnished with chives.
