Description
A hearty black-eyed pea and collard green soup packed with flavor.
Ingrédients

- 1 cup black-eyed peas, soaked overnight
- 1 bunch collard greens, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic, cumin, and smoked paprika.
- Add soaked black-eyed peas and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add chopped collard greens and cook for an additional 15 minutes.
- Season with salt and pepper to taste.
- Serve hot.
