Ingrédients

  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Oil for frying
  • 2 cups mixed greens

Instructions

  1. In a bowl, mash the cooked black-eyed peas.
  2. Add cornmeal, flour, onion, garlic, cumin, cayenne, and salt. Mix well.
  3. Heat oil in a pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil.
  5. Fry until golden brown on both sides.
  6. Remove and drain on paper towels.
  7. Serve fritters warm with mixed greens.
