Description
A refreshing black-eyed pea salad, also known as cowboy caviar, packed with flavors and nutrients.

- 1 can black-eyed peas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped

- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black-eyed peas, cherry tomatoes, corn, bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold as a side dish or appetizer.

- This salad can be made a day in advance.
- Feel free to add avocado for extra creaminess.
