Description
A simple and delicious black eyed peas and rice recipe.
Ingrédients

- 1 cup black eyed peas
- 1 cup rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Rinse and soak black eyed peas for 4 hours.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add soaked black eyed peas, water, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice and cook for an additional 20 minutes or until rice is tender.
- Fluff with a fork and serve warm.
Notes
- Adjust seasoning to taste.
- Use vegetable broth for more flavor.
- Great as a side dish or main course.
