- 1 ham hock or 1 cup diced ham

- 1 teaspoon cayenne pepper (optional)
- 2 bay leaves
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain and rinse the peas again.
- In a pot, combine the peas, water, onion, garlic, ham hock, salt, black pepper, cayenne pepper, and bay leaves.
- Bring to a boil over medium heat.
- Reduce heat and let simmer for 1 to 1.5 hours until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Discard bay leaves before serving.
Notes
- Serve with cornbread for a complete meal.
- You can add greens like collard greens for extra luck.
- Leftovers can be stored in the refrigerator for up to 3 days.
