Instructions

  1. Soak black eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add diced ham and cook for 3 minutes.
  6. Add black eyed peas, chicken broth, salt, pepper, bay leaf, and thyme.
  7. Bring to a boil, then reduce heat and simmer for 1 hour.
  8. Remove bay leaf before serving.
