A hearty dish featuring black-eyed peas and sausage.
Ingrédients

- 1 cup black-eyed peas, dried
- 1 pound sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Soak black-eyed peas in water overnight.
- Drain and rinse peas.
- In a large pot, cook sliced sausage over medium heat until browned.
- Add onion and garlic, sauté until softened.
- Add black-eyed peas, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
Notes
- Serve with cornbread for a complete meal.
