- 1 cup black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- Optional: diced ham or bacon for flavor
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, combine peas and water. Bring to a boil.
- Add onion, garlic, salt, pepper, olive oil, and bay leaf.
- Reduce heat and simmer for 30-40 minutes, until peas are tender.
- If using, add diced ham or bacon and cook for an additional 10 minutes.
- Remove bay leaf before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Adjust seasoning to taste.
- Best served hot as a side dish or main course.
