Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the breakfast sausage until browned.
- Add the diced bell peppers and onions. Cook until soft.
- In a bowl, whisk the eggs and season with salt and pepper.
- Pour the eggs into the skillet with sausage and vegetables. Stir until cooked through.
- Warm the tortillas in a separate pan.
- Fill each tortilla with the egg mixture and top with shredded cheese.
- Roll up and serve warm.
