- 12 eggs
- 1 cup milk
- 2 cups shredded cheese
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked sausage, crumbled
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 1 package of tortillas
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add cheese, bell peppers, onions, sausage, salt, and pepper to the egg mixture.
- Heat olive oil in a skillet over medium heat.
- Pour the egg mixture into the skillet and cook until edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until fully set.
- Remove from oven and let cool for a few minutes.
- Cut into squares and serve in tortillas.
Notes
- You can substitute the sausage with bacon or leave it out for a vegetarian option.
- Add your favorite spices for extra flavor.
- This dish can be made ahead of time and reheated.
