  • 1 tbsp olive oil
  • 1 bay leaf
  • 1/2 cup diced tomatoes

Instructions

  1. Rinse black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until translucent.
  4. Add soaked black-eyed peas, water, salt, pepper, cumin, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Add diced tomatoes and cook for an additional 10 minutes.
  7. Remove bay leaf before serving.
