Description
A simple and tasty black-eyed peas recipe.
Ingrédients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tbsp olive oil
- 1 bay leaf
- 1/2 cup diced tomatoes
Instructions
- Rinse black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add soaked black-eyed peas, water, salt, pepper, cumin, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add diced tomatoes and cook for an additional 10 minutes.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Serve with rice or cornbread.
- Store leftovers in the fridge for up to 3 days.
