Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and cumin, and cook for 1 minute.
- Add the black eyed peas and vegetable broth.
- Simmer for 10 minutes.
- Stir in lemon juice and season with salt and pepper.
- Serve warm.
