Description
Canning Hoppin’ John is a method to preserve this traditional Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup black-eyed peas
- 1 cup rice
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 1 cup diced ham (optional)
Instructions
- Rinse and soak the black-eyed peas overnight.
- In a pot, sauté onion and garlic until soft.
- Add soaked peas, rice, broth, salt, and spices to the pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove bay leaf and stir in ham if using.
- Fill jars with the mixture, leaving headspace.
- Seal jars and process in a pressure canner for 75 minutes.
Notes
- Adjust spices to taste.
- Ensure jars are sterilized before use.
- Store canned Hoppin’ John in a cool, dark place.
