Description
A moist and flavorful zucchini bread topped with a cinnamon streusel.

- 2 cups grated zucchini
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/2 cup brown sugar (for streusel)
- 1/4 cup all-purpose flour (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
- 2 tablespoons unsalted butter, melted (for streusel)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Add dry ingredients to the wet mixture and stir until combined.
- If using, fold in chopped walnuts.
- In a small bowl, combine brown sugar, flour, cinnamon, and melted butter for the streusel topping.
- Pour half of the batter into a greased loaf pan.
- Sprinkle half of the streusel on top, then add the remaining batter.
- Top with the remaining streusel.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can be frozen for up to 3 months.
- Make sure to squeeze excess moisture from zucchini.
