- 2 lobsters, cooked and chopped
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a pot, melt butter over medium heat.
- Add onion and garlic; sauté until soft.
- Pour in white wine; cook for 2 minutes.
- Add seafood stock and thyme; bring to a simmer.
- Stir in chopped lobster and simmer for 10 minutes.
- Blend the mixture until smooth.
- Return to pot, add heavy cream, and heat through.
- Season with salt and pepper.
- Serve hot.
