Description
A nutritious and hearty dish made with dried black-eyed peas.
Ingrédients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Rinse the dried black-eyed peas under cold water.
- Soak the peas in water overnight or for at least 6 hours.
- Drain the soaked peas and set aside.
- In a pot, heat olive oil over medium heat.
- Add the chopped onion and garlic. Sauté until onion is translucent.
- Add the soaked peas, water, salt, pepper, cumin, and bay leaf to the pot.
- Bring to a boil, then reduce heat. Cover and simmer for about 1 hour or until peas are tender.
- Remove the bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Serve hot as a side dish or main course.
- Store leftovers in the refrigerator for up to 3 days.
