Ingrédients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Rinse the dried black-eyed peas under cold water.
  2. Soak the peas in water overnight or for at least 6 hours.
  3. Drain the soaked peas and set aside.
  4. In a pot, heat olive oil over medium heat.
  5. Add the chopped onion and garlic. Sauté until onion is translucent.
  6. Add the soaked peas, water, salt, pepper, cumin, and bay leaf to the pot.
  7. Bring to a boil, then reduce heat. Cover and simmer for about 1 hour or until peas are tender.
  8. Remove the bay leaf before serving.

  • Adjust seasoning to taste.
