Description
A simple recipe for cooking dry black-eyed peas.
Ingrédients

- 1 cup dry black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- Soak the peas overnight or for at least 6 hours.
- Drain and rinse the peas again.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black-eyed peas, water, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 45 minutes to 1 hour until peas are tender.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Serve with rice or cornbread.
- Store leftovers in the refrigerator for up to 3 days.
