  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. Soak the peas overnight or for at least 6 hours.
  3. Drain and rinse the peas again.
  4. In a pot, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add black-eyed peas, water, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 45 minutes to 1 hour until peas are tender.
  9. Remove bay leaf before serving.

Notes

  • Adjust seasoning to taste.
  • Serve with rice or cornbread.
  • Store leftovers in the refrigerator for up to 3 days.
