  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine black beans, corn, bell pepper, cherry tomatoes, avocado, and cilantro.
  7. Add cooled quinoa to the bowl.
  8. Drizzle lime juice, salt, and pepper over the mixture.
  9. Toss gently to combine all ingredients.
  10. Serve chilled or at room temperature.
