Ingrédients

  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. Add black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Stir and cook for another 5 minutes.
  6. Remove from heat and let it sit for 5 minutes.
  7. Fluff with a fork and garnish with fresh cilantro.

  • This dish can be served warm or at room temperature.
