Description

Ingrédients

  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 2 cups vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Soak black-eyed peas in water overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic; sauté until soft.
  5. Add carrot and cook for a few minutes.
  6. Add the peas, oregano, salt, and pepper.
  7. Pour in vegetable broth and bring to a boil.
  8. Reduce heat, cover, and simmer for 30-40 minutes until peas are tender.
  9. Garnish with fresh parsley before serving.

Notes

  • Can substitute vegetable broth with chicken broth.
  • Adjust seasoning according to taste.
  • Serve warm or at room temperature.
