Description
A traditional Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup black-eyed peas
- 1 cup white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse peas.
- In a pot, heat olive oil over medium heat.
- Sauté onion, garlic, and bell pepper until soft.
- Add black-eyed peas and rice to the pot.
- Pour in vegetable broth and stir.
- Add salt, black pepper, and cayenne pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Adjust spices to taste.
- Can add smoked sausage for flavor.
- Serve with cornbread.
